History has it how the Turkish soldiers would use their swords as skewers to roast chunks of marinated meats—better known as ‘Kebabs.’ But, that’s too little a description for what has turned out to be one of the most popular snacks in India. Over the years, ‘Kebabs’ underwent transformations in the Indian royal kitchens of Mughals or evolved further at contemporary street food markets in the country.
